My assumption is some people like the staggered look and some people just don't realize how wide a tire you can fit up front. I run 275 hooisers front and rear. I'd run wider if I could but i can't afford wider fenders right now. Oversteer and understeer can be manipulated with sway bar, shock settings and tire pressure so I put as much rubber on the ground to start with and go from there. You can also run a 17x9 front and rear and run a thinner tire up front if you'd like (255 maybe) and from what i've read you will have more responsive turn in as a tire on a wider wheel will have less deflection to my understanding.
